Strawberry Bread

A very moist strawberry quick bread to enjoy for breakfast or for dessert. Topped with a vanilla drizzle frosting. A perfect treat to make using fresh strawberries in season.

Strawberry Bread

Ingredients
  • 2 cups flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 egg, room temperature
  • ¾ cup sugar
  • ¼ cup brown sugar
  • 1 cup buttermilk, room temperature
  • ⅓ cup oil
  • 2 tsp. vanilla
  • 1 tsp. strawberry extract
  • 1½- 2 cups fresh strawberries, diced
  • Frosting
  • 1 cup confectioners' sugar
  • 1 tsp. vanilla
  • Milk
Instructions
  1. Mix flour, baking soda and salt in a large bowl.
  2. In a separate bowl mix egg, sugar and brown sugar.
  3. Add buttermilk, then oil, vanilla and strawberry extract.
  4. Add liquid ingredients to the flour mixture, ⅓ at a time, mixing well.
  5. Add two tablespoons of flour to diced strawberries to coat.
  6. Gently fold in strawberries.
  7. Grease one large loaf pan.
  8. Bake at 350 degrees for 50-60 minutes. After 30 minutes, lightly cover bread with aluminum foil to keep top from getting too brown. Test with toothpick- may need another few minutes in oven.
  9. Frosting- Mix confectioners sugar with milk and a teaspoon vanilla.
  10. Drizzle over top of cooled strawberry bread.

Classic Waffles
1 cup flour
1 tbsp. sugar
2 tsp. baking powder
1/4 tsp. salt
1 egg
1 cup milk
2 tbsp. melted butter
1 tsp. vanilla

1. Mix flour, sugar, baking powder and salt in a medium bowl. 
2. Melt butter, let it cool. Whisk egg, milk and butter together. 
3. Add liquid ingredients to flour mixture. Add vanilla for flavor. 
4. Use cooking spray to coat waffle maker. 
5. Pour 2 tbsp. batter into waffle maker, cook until golden brown.
