A very moist strawberry quick bread to enjoy for breakfast or for dessert. Topped with a vanilla drizzle frosting. A perfect treat to make using fresh strawberries in season.

Ingredients
- 2 cups flour
- 1 tsp. baking soda
- ½ tsp. salt
- 1 egg, room temperature
- ¾ cup sugar
- ¼ cup brown sugar
- 1 cup buttermilk, room temperature
- ⅓ cup oil
- 2 tsp. vanilla
- 1 tsp. strawberry extract
- 1½- 2 cups fresh strawberries, diced
- Frosting
- 1 cup confectioners' sugar
- 1 tsp. vanilla
- Milk
Instructions
- Mix flour, baking soda and salt in a large bowl.
- In a separate bowl mix egg, sugar and brown sugar.
- Add buttermilk, then oil, vanilla and strawberry extract.
- Add liquid ingredients to the flour mixture, ⅓ at a time, mixing well.
- Add two tablespoons of flour to diced strawberries to coat.
- Gently fold in strawberries.
- Grease one large loaf pan.
- Bake at 350 degrees for 50-60 minutes. After 30 minutes, lightly cover bread with aluminum foil to keep top from getting too brown. Test with toothpick- may need another few minutes in oven.
- Frosting- Mix confectioners sugar with milk and a teaspoon vanilla.
- Drizzle over top of cooled strawberry bread.
