Vanilla cupcakes made from scratch are just delicious. This recipe makes a moist cupcake with rich vanilla flavor. Topped off with a white chocolate buttercream frosting. They are perfect for any spring celebration.

Ingredients
- 1⅔ cup flour
- ½ tsp. baking powder
- ¼ tsp. baking soda
- ½ tsp. salt
- 1 cup sugar
- ½ cup butter, melted
- ¾ cup buttermilk
- ¼ cup sour cream
- 3 tsp. vanilla
- 2 egg whites
- ⅔ cup white chocolate chips
- 4 oz. cream cheese
- 2 tsp. vanilla
- 3 cups powdered sugar
- 1-2 tbsp. milk
Instructions
- In a bowl, mix flour, baking powder, baking soda and salt.
- In a larger bowl, mix melted butter, sugar, buttermilk, sour cream and vanilla using a whisk.
- In a separate bowl, beat egg whites until soft peaks form, set aside.
- Add dry ingredients to butter mixture and beat until well blended.
- Lightly fold in egg whites.
- Fill cupcake liners ⅔ of the way full.
- Bake at 350 degrees for 15 minutes.
- Makes about 18 cupcakes.
- Frosting- Melt white chocolate in microwave, stir every 30 seconds until melted. Let cool.
- Beat butter and cream cheese together.
- Add melted white chocolate and then vanilla.
- Add powdered sugar, one cup at a time and beat well, adding a little milk to reach consistency to frost.
