Vanilla Cupcakes with White Chocolate Buttercream Frosting
Ingredients
  • 1⅔ cup flour
  • ½ tsp. baking powder
  • ¼ tsp. baking soda
  • ½ tsp. salt
  • 1 cup sugar
  • ½ cup butter, melted
  • ¾ cup buttermilk
  • ¼ cup sour cream
  • 3 tsp. vanilla
  • 2 egg whites
  • ⅔ cup white chocolate chips
  • 4 oz. cream cheese
  • 2 tsp. vanilla
  • 3 cups powdered sugar
  • 1-2 tbsp. milk
Instructions
  1. In a bowl, mix flour, baking powder, baking soda and salt.
  2. In a larger bowl, mix melted butter, sugar, buttermilk, sour cream and vanilla using a whisk.
  3. In a separate bowl, beat egg whites until soft peaks form, set aside.
  4. Add dry ingredients to butter mixture and beat until well blended.
  5. Lightly fold in egg whites.
  6. Fill cupcake liners ⅔ of the way full.
  7. Bake at 350 degrees for 15 minutes.
  8. Makes about 18 cupcakes.
  9. Frosting- Melt white chocolate in microwave, stir every 30 seconds until melted. Let cool.
  10. Beat butter and cream cheese together.
  11. Add melted white chocolate and then vanilla.
  12. Add powdered sugar, one cup at a time and beat well, adding a little milk to reach consistency to frost.
