Confetti cupcakes are delicious and fun! Made with a cake mix as the base, the cupcake is flavorful and light. After trying several recipes from scratch, I went back to my vanilla cupcake recipe using a Pillsbury White Cake mix. Great for upcoming summer parties and picnics!

Ingredients
- Pillsbury Moist Supreme Classic White Cake Mix
- 1¼ cups milk
- ½ cup melted butter
- 4 egg whites
- 1 tsp. vanilla
- ⅓ cup nonpareils
- 3¾ cup powdered sugar
- ½ cup butter (one stick) softened
- 2 tsp vanilla
- Milk
- Nonpareils to decorate
Instructions
- Mix cake mix, milk, melted butter, and vanilla in bowl.
- Add egg whites and beat for 2 minutes on medium speed.
- Gently fold in nonpareils using spoon or spatula.
- Pour cake mix into cupcake liner about ⅔ of the way.
- Bake at 350 degrees for 18 minutes.
- Cool.
- Frosting- Cream butter (softened at room temperature, not melted) with 2 cups powdered sugar.
- Add vanilla and beat well.
- Alternate rest of powdered sugar and a little milk until consistency to frost.
- Using a Wilton 1 M tip (star tip) pipe frosting in a swirl. Sprinkle with nonpareils before frosting sets.
