Bunny cupcakes are adorable and easy to decorate. Just perfect for Easter and Springtime gatherings! Try this vanilla cupcake recipe or use a cake mix. Large marshmallows, pink jelly beans, pink sanding sugar, chocolate sprinkles and a little black decorating icing are all you need to create the bunnies. Use mini-marshmallows to create lamb cupcakes.

Ingredients
- 3⅔ cup flour
- ¾ tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 1½ cups butter (3 sticks), softened
- 2 cups sugar
- 3 large eggs
- 2 egg whites
- 1 Tbsp. vanilla
- 1½ cups buttermilk, room temperature
- Frosting- 3¾ cups powdered sugar
- 1 stick butter, softened
- 2 tsp. vanilla
- Milk
- Bunny- large marshmallows, pink sanding sugar, pink jelly beans, black decorating icing, chocolate jimmies
Instructions
- In a bowl, mix flour, baking soda, baking powder and salt.
- In a larger bowl, beat butter and sugar together until creamy.
- Add eggs, one at a time, then vanilla.
- Add dry ingredients to butter mixture, ⅓ at a time, mix well, scraping sides of bowl.
- Add buttermilk, beating on low until combined.
- Fill cupcake liners ⅔ way full.
- Bake at 350 degrees for 18 minutes.
- Frosting- Cream butter (softened but not melted), and 2 cups powdered sugar.
- Add vanilla, beat well.
- Alternate adding rest of powdered sugar with a little milk, beating until consistency to frost.
- To make bunnies- First frost cupcake using a piping bag, smooth frosting with a spatula or knife.
- Cut a large marshmallow in half diagonally and dip into pink sanding sugar sprinkles.
- Place bunny ear shapes on the top of cupcake.
- Using black decorating icing, pipe two eyes. Add a pink jellybean nose.
- Press chocolate sprinkles on each side of the nose for the whiskers.
