Bunny Cupcakes
Ingredients
  • 3⅔ cup flour
  • ¾ tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1½ cups butter (3 sticks), softened
  • 2 cups sugar
  • 3 large eggs
  • 2 egg whites
  • 1 Tbsp. vanilla
  • 1½ cups buttermilk, room temperature
  • Frosting- 3¾ cups powdered sugar
  • 1 stick butter, softened
  • 2 tsp. vanilla
  • Milk
  • Bunny- large marshmallows, pink sanding sugar, pink jelly beans, black decorating icing, chocolate jimmies
Instructions
  1. In a bowl, mix flour, baking soda, baking powder and salt.
  2. In a larger bowl, beat butter and sugar together until creamy.
  3. Add eggs, one at a time, then vanilla.
  4. Add dry ingredients to butter mixture, ⅓ at a time, mix well, scraping sides of bowl.
  5. Add buttermilk, beating on low until combined.
  6. Fill cupcake liners ⅔ way full.
  7. Bake at 350 degrees for 18 minutes.
  8. Frosting- Cream butter (softened but not melted), and 2 cups powdered sugar.
  9. Add vanilla, beat well.
  10. Alternate adding rest of powdered sugar with a little milk, beating until consistency to frost.
  11. To make bunnies- First frost cupcake using a piping bag, smooth frosting with a spatula or knife.
  12. Cut a large marshmallow in half diagonally and dip into pink sanding sugar sprinkles.
  13. Place bunny ear shapes on the top of cupcake.
  14. Using black decorating icing, pipe two eyes. Add a pink jellybean nose.
  15. Press chocolate sprinkles on each side of the nose for the whiskers.
