Unicorn Cupcakes

Sweet unicorn cupcakes are easy and fun to decorate. This vanilla cupcake recipe is just yummy. Sour cream, butter and cake flour create a light, fluffy cupcake that is so delicious.

Unicorn Vanilla Cupcakes

Ingredients
  • 1¾ cups cake flour
  • ¾ tsp. baking powder
  • ¾ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup butter (1 stick), softened at room temperature
  • 1 cup sugar
  • 3 egg whites
  • 3 tsp. vanilla
  • ½ cup sour cream, room temperature
  • ½ cup milk
  • Frosting- 3¾ cups powdered sugar
  • 1 stick butter, softened
  • 2 tsp. vanilla
  • Milk
  • Unicorn- small marshmallows, gold sanding sugar, black decorating icing, pink, turquoise and purple food coloring, gold birthday candles or Wilton unicorn decorating kit.
Instructions
  1. In a bowl, mix flour, baking soda, baking powder and salt.
  2. In a larger bowl, beat butter until creamy, add sugar and beat well.
  3. Add egg whites, then vanilla.
  4. Add sour cream, beating until combined.
  5. Add dry ingredients, ⅓ at a time, alternating with milk.
  6. Mix well, scraping sides of bowl.
  7. Fill cupcake liners ⅔ way full.
  8. Bake at 350 degrees for 19 minutes. Makes about 15 cupcakes.
  9. Frosting- Cream butter (softened but not melted), and 2 cups powdered sugar.
  10. Add vanilla, beat well.
  11. Alternate adding rest of powdered sugar with a little milk, beating until consistency to frost.
  12. To make unicorns-Frost cupcake with white frosting using a piping bag or knife.
  13. Cut a small marshmallow diagonally in half, dip in gold sprinkles for ears.
  14. Divide remaining frosting into three bowls and add food coloring to make turquoise, pink and purple frosting for unicorn mane. Place in piping bags and using a small star tip, pipe frosting on one half of cupcake.
  15. Add marshmallow ears and a gold unicorn horn or gold birthday candle.
  16. Using black decorating icing, add eyes.
