Luck of the Irish! After learning about Irish culture and reading St. Patrick’s Day by Gail Gibbons, we created lucky leprechauns using Nutter Butter cookies. This is a fun and easy cookie to make to celebrate St. Patrick’s Day.

Ingredients
- 1 package Nutter Butter Double Nutty cookies
- 12 oz. green candy wafers
- 12 oz. orange candy wafers
- 4 oz. white chocolate candy wafers
- 1 container small candy eyes
- Black and orange decorating icing
- 1 bag mini M & M's
- Shamrock sprinkles
Instructions
- Melt orange candy wafers in microwave stirring every 30 seconds until melted.
- Dip one side of Nutter Butter cookie in orange melted candy, using a spoon, add to sides of cookie to create beard. Place on waxed paper and let harden.
- Melt green candy wafers in microwave stirring every 30 seconds until melted.
- Dip the opposite side of cookie in green melted candy to create the hat.
- Spoon a small amount of melted green candy in a piping bag, pipe the brim for the hat.
- Add a tiny bit of melted green candy on shamrock sprinkle to attach to hat.
- Pipe a black band on hat using black decorating icing.
- Melt a small amount of white chocolate wafers in microwave. Add a tiny bit on back of candy eye to attach to cookie.
- Using orange decorating icing or frosting, make a nose.
- Mini M & M's can also be used for eyes and nose.
- Let candy harden on cookie, it will no longer look shiny when hardened.
