Happy Halloween! These cupcakes are frighteningly delicious! Vanilla meringue frosting is easy to make and can be piped to look like a ghost. Add a two chocolate chips for the eyes. Using a Betty Crocker cake mix for the cupcake, just substitute milk for the water and follow directions on the box.

Ingredients
- Betty Crocker Super Moist Triple Chocolate Fudge Cake Mix
- 1¼ cups milk
- ½ cup vegetable oil
- 3 eggs
- Frosting-2 Tbsp. light corn syrup
- ¾ cup sugar
- ¼ cup water
- 4 egg whites
- ¼ tsp. cream of tartar
- 1 tsp. vanilla
Instructions
- Betty Crocker Super Moist Triple Chocolate Fudge Cake Mix- follow directions on box, substituting milk for water.
- Frosting- combine corn syrup, ½ cup plus 2 tablespoons sugar and ¼ cup water in small saucepan.
- Cook over medium- high heat bringing to a boil, stirring until sugar dissolves.
- Cook without stirring 4 minutes or until thermometer registers 240 degrees.
- In a large bowl, combine egg whites and cream of tartar.
- Beat at high speed until medium peaks form.
- Gradually pour hot sugar mixture into egg white mixture, beating at medium speed and then at high speed until stiff peaks form.
- Stir in vanilla.
- Pipe over cooled cupcakes using a plain tip.
