Apple Bread
Ingredients
  • 3 cups flour
  • 2 cups sugar
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 4 eggs, room temperature
  • 1 cup oil
  • 2 tsp. vanilla
  • ⅓ cup water
  • 2 cups diced apples
  • Frosting- 1 cup confectioners sugar
  • 1 tsp. vanilla
  • Cider
Instructions
  1. Mix flour, sugar, baking soda, baking powder, salt, cinnamon and nutmeg in large bowl, set aside.
  2. Beat eggs and oil, then add vanilla.
  3. Add flour mixture to liquids, ⅓ at a time, alternating with water, mix well.
  4. Fold in diced apples.
  5. Grease two large loaf pans.
  6. Bake at 350 degrees for 50 minutes. Test with toothpick- may need another few minutes to bake.
  7. Frosting- Mix confectioners sugar with cider and vanilla until desired consistency.
  8. Drizzle over top of cooled apple bread.
Notes
To keep bread from browning, lightly cover with greased foil for the last ten minutes of baking.
