Chocolate Cupcakes with Vanilla Meringue Frosting
Ingredients
  • Betty Crocker Super Moist Triple Chocolate Fudge Cake Mix
  • 1¼ cups milk
  • ½ cup vegetable oil
  • 3 eggs
  • Frosting-2 Tbsp. light corn syrup
  • ¾ cup sugar
  • ¼ cup water
  • 4 egg whites
  • ¼ tsp. cream of tartar
  • 1 tsp. vanilla
Instructions
  1. Betty Crocker Super Moist Triple Chocolate Fudge Cake Mix- follow directions on box, substituting milk for water.
  2. Frosting- combine corn syrup, ½ cup plus 2 tablespoons sugar and ¼ cup water in small saucepan.
  3. Cook over medium- high heat bringing to a boil, stirring until sugar dissolves.
  4. Cook without stirring 4 minutes or until thermometer registers 240 degrees.
  5. In a large bowl, combine egg whites and cream of tartar.
  6. Beat at high speed until medium peaks form.
  7. Gradually pour hot sugar mixture into egg white mixture, beating at medium speed and then at high speed until stiff peaks form.
  8. Stir in vanilla.
  9. Pipe over cooled cupcakes using a plain tip.
